Halloween is quickly approaching. I already have my costume (or three) and I’m in the spirit for Halloween themed treats and Hocus Pocus marathons. My husband is a huge fan of Halloween and decorates our house and yard accordingly.
I saw the idea for these cute little frosting filled meringues while searching for pumpkin meringues and couldn’t resist making them. All the fun of macarons with way less effort and failure!

Ingredients:
- 1/2 cup aquafaba
- 1/2 cup plus 2 tablespoons granulated sugar
- 1/2 tsp lemon juice
- 1 tsp vanilla extract
- 3-4 drops yellow food coloring
Frosting:
- 2 tbsp vegan butter
- 2 tbsp vegetable shortening
- 2-3 cups powdered sugar
- 2-3 tsp plant milk
- 1 tsp vanilla extract
Directions:
1. Preheat oven to 175°F. Refrigerate aquafaba overnight. In a clean metal or glass bowl, whip until soft peaks form and add lemon juice.
Continue whipping until the meringue no longer moves when tipped upside down. Add sugar one tablespoon at a time and continue to whip for at least 30 seconds after each addition. Add vanilla extract.
2. Separate meringue into two bowls and dye one with yellow food coloring. Put each one into piping bag fitted with a large round tip (or ziploc bag with the corner cut off.) Pipe onto parchment lined baking sheets- white into taller peaks and yellow into shorter bases. Bake on middle rack for about 2 hours until the meringues are completely dry. Leave in closed oven until cool.
3. Meanwhile, beat together vegan butter and shortening until fluffy. Add powdered sugar one cup at a time and add plant milk to thin. Use about 6 drops of yellow food coloring and 1-2 drops of red coloring to dye orange. Add vanilla extract. Place in a bag with a round tip.
4. When meringues have completely cooled pipe frosting on the yellow base and top with a white tip.

Just made these. Does it make a difference if you folded in a drop of oil-based flavouring? My macarons are a little bit gummy and haven’t dried inside yet even after 2.5 hrs of baking at 90 C.
They may just have had a bit more moisture – I’ve never had a problem with a little oil based flavor.
