Chocolate Silken Tofu Thin Mint Pie

Are you like me and have held on to your last few boxes of Mori-Nu Silken Tofu and Girl Scout Thin Mint cookies in case of emergency? Well, I think we’ve hit that emergency threshold with the current state of events. 

I don’t know about you, but I’ve been craving lots of sweets, carbs, and creamy, comfort foods. I usually make this recipe for summer cookouts or potlucks, but with none of those on the horizon, I’m unfortunately going to have to polish off this whole pie plate by myself.

Vegan Tiramisu Macarons

1 Nov Vegan Tiramisu Macarons

Inspiration comes in the strangest places sometimes. I saw this recipe for vegan tiramisu last week and though it was gorgeous, and immediately wanted to make tiramisu macarons. Like most things in my life, it took about 3 days before I was actually able to make the attempt. Unfortunately I wasn’t able to infuse coffee liqueur into the shells, so I would suggest eating these with a shot of Kahlua.

Since today is World Vegan Day, it seemed like a good day to share the recipe. I’m actually going to be bringing these to a work potluck later, and I’m sure they’re going to be well received! Who can resist chocolate, coffee, and buttercream!?

Candy Corn Meringues

Halloween is quickly approaching. I already have my costume (or three) and I’m in the spirit for Halloween themed treats and Hocus Pocus marathons. My husband is a huge fan of Halloween and decorates our house and yard accordingly.

I saw the idea for these cute little frosting filled meringues while searching for pumpkin meringues and couldn’t resist making them. All the fun of macarons with way less effort and failure!

Peanut Butter Cookies

Cookies are delicious. This is a known fact of the universe.

Peanut butter is delicious. This is another known fact. (Unless you’re allergic, in which case, avoid this recipe at all costs.)

Let’s just say these are best for a day when you are leaving the house, otherwise you will eat the entire container. Or bring them with you and share with your coworkers, because shared calories don’t count. That is another known fact.

Aquafaba is a great binder in these cookies. In fact, these are better than any other vegan peanut butter cookie I have tried. They are crunchy with a bit of give, like a perfect cookie should be. But don’t just listen to me, try them yourself!
